Easy Peasy Pineapple Cheesycake

16 oz. cream cheese

1 cup shredded cheddar

1 can crushed pineapple, undrained

1 package graham cracker crumbs or a graham cracker pie crust

1/2 stick butter or margarine

1 cup finely chopped pecans

Stir together cream cheese, pineapple and pecans. Mix on high for 3 minutes or until creamy smooth. Stir in the cheddar. Melt butter and mix with graham crackers into a pie pan or casserole glass dish. If you use a pre-made crust, you will not need butter. After packing the graham crackers down, smooth mixture over them. Put in fridge and let chill. This is best served 24 hours after mixing. It gives the flavors a chance to really set in. I just did this for Christmas, and it was a total hit. Kids really love this smoothed on top of a graham cracker instead of the crust.
